MMMMM-----------------------SOUL CASSEROLE----------------------------
2 1/2 lb Ground chuck
1/4 c Oil
3 cl Garlic; chopped
1 lg Onion; chopped
1 Bell pepper; chopped
20 oz Can whole tomatoes
29 oz Can whole kernel corn
29 oz Can okra; sliced
10 ds Tabasco sauce
4 tb Chili powder; extra hot
Salt; to taste
Pepper; to taste
Seasoned salt; to taste
Celery salt; to taste
1/2 c Corn meal
1 c Water; hot
MMMMM--------------------------TOPPING-------------------------------
1 1/2 c Butter
1 ts Salt
1/2 c Corn meal
2 Eggs; slightly beaten
1/2 lb Sharp cheese; grated
Casserole:
Brown meat, onion, garlic, and bell pepper in oil, seasoning to taste
with salt, pepper, seasoned salt, and celery salt. Add tomatoes,
corn, okra, and tabasco sauce, and simmer slowly for 10 minutes,
stirring occasionally. Mix corn meal in hot water and stir into
mixture. Pour in casserole baking dish leaving a 2" margin at top.
Top with Aunt Sarah's Soul Casserole Topping.
Topping:
Simmer milk, corn meal, and salt over low heat and stir until mixture
thickens.
Remove from heat and stir in eggs & cheese. Spoon over meat mixture in
casserole dish. Bake at 350?F for 45 minutes.
